These parcels of fruit were left in contact with their skins to maximise flavour and texture

Harvested in the early morning and lightly pressed to minimise phenolics

Harvested in the cool of the evening and pressed then cool fermented and bottled early to capture vibrancy and freshness

Fermentation in stainless steel and a short time on lees to add a savoury element
